Frittelle Di Zucca (Pumpkin fritters)

Ingredients

  • 2 lb/ 1 kg pumpkin, whole or in pieces
  • 3 eggs
  • 1 tbsp chopped mint
  • 2 cloves garlic, chopped
  • pinch of ground cinnamon
  • 3 1/2 oz 1 2/3 cup/100g plain ( all purpose ) flour
  • oil for deep frying
  • salt and pepper

Preparation

  • Cook the pumpkin in the oven at 350 F/180C for 30 minutes.
  • Discard the seeds and filaments,then scrape out the pulp with a fork.
  • Make a paste by mixing the pulp with 1 egg,the mint,garlic,cinnamon and salt and pepper.
  • shape into walnut-size balls. Beat the remaining 2 eggs. Roll the pumpkin balls in flour,dip in the egg and deep-fry in very hot oil until golden.
  • Drain on paper towels, arrange on a platter and serve.
