Frittelle Di Zucca (Pumpkin fritters)
Ingredients
- 2 lb/ 1 kg pumpkin, whole or in pieces
- 3 eggs
- 1 tbsp chopped mint
- 2 cloves garlic, chopped
- pinch of ground cinnamon
- 3 1/2 oz 1 2/3 cup/100g plain ( all purpose ) flour
- oil for deep frying
- salt and pepper
Preparation
- Cook the pumpkin in the oven at 350 F/180C for 30 minutes.
- Discard the seeds and filaments,then scrape out the pulp with a fork.
- Make a paste by mixing the pulp with 1 egg,the mint,garlic,cinnamon and salt and pepper.
- shape into walnut-size balls. Beat the remaining 2 eggs. Roll the pumpkin balls in flour,dip in the egg and deep-fry in very hot oil until golden.
- Drain on paper towels, arrange on a platter and serve.
